On the menu, Ligurian tradition is the starting point: stuffed mussels La Spezia style, marinated anchovies with lemon and parsley, and trenette with Genoese DOP basil pesto. Alongside the classics are more contemporary interpretations that enhance modern techniques without moving away from the character of the region.
